性质:又称黄酮。一类具有三环苯基苯并吡喃结构的呈色化合物。基本结构由两个苯环连接一含氧吡喃基组成。随着杂环上各取代基的不同,形成一系列不同组成、不同呈色的化合物,如花色素、黄酮醇、黄酮、异黄酮等。而这类化合物,又可由于不同取代基形成一组衍生物,如花色素,由于苯基上两个取代基各为-H,-OH,-OCH3而形成至少六种呈蓝、红、紫等不同颜色的花色素。广泛存在于高等植物的树皮、花、果实、蔬菜中,作为天然色素外,而且具有似维生素P或更多的生理活性。茶饮料中的茶黄酮为类黄酮聚合物,就是茶饮料保健功能的生理活性物质,,
