    由多个单糖分子缩合去水而生成的化合物。广泛分布于 动物和植物界 。 一些不溶性的多糖构成植 物和动物的骨架,如植物的纤维素和动物的甲壳素,一般称为结构多糖。另一些多糖在生物体内作为能量贮存,如淀粉和肝糖,在需要时可以通过生物体内酶系统的作用分解,释放出单糖。还有许多多糖具有更复杂多样的生理功能,如粘多糖、血型物质等,它们在生物体内起着重要的作用。
    多糖可分为同质多糖和杂多糖两种:由一种单糖缩合去水组成的多糖,称为同质多糖,按照糖单元的排列,又可分为直链和支链形式;含有两种或两种以上( 一般不超过 3个或4个单糖单元 )的不同单糖组成的多糖,称为杂多糖,它们也可以有直链型和支链型。多糖为带色非晶形物质,一般带甜味,大多不溶于水,有些仅能形成胶体溶液。能被水解成二糖或单糖等。
