泡白菜
原料:
大白菜2千克，大蒜100克，萝卜1千克，食盐60克，辣椒40克。
制法:
（1）选择有心的白菜，去掉菜头和外帮，用水清洗后沥干，切成4厘米小块；萝卜洗净去皮切成片。
（2）冷开水500克溶解食盐30克，搅拌均匀后盛于陶缸内，再把白菜、萝卜放入盐水中浸泡1～2天。
（3）捞出白菜、萝卜，倒掉缸内盐水。再将白菜、萝卜放入缸内，码放均匀，撒上辣椒和大蒜，再在菜料上压上干净的石头。
（4）用冷开水溶解剩余的食盐，搅拌均匀注入陶缸内，盖好缸盖。过2～3天，如果菜汤没有淹没菜料，可再加些冷开水。泡制10天左右，即可食用。
制作要领：
（1）可用泡菜坛制作。
（2）所用工具应清洗干净。
食用方法：
用此法泡制的白菜色微黄、味酸辣，既可作为凉菜直接食用；也可作为某些热菜的配料使用，如泡菜酸辣鱼等。其中泡辣椒可作为鱼香肉丝的配料。
