补充资料：金银鲳鱼
主料： 鲳鱼1条600克，青椒50克，蒜片20克，鸡蛋清半只，洋葱末50克
配料： 胡椒粉0.5克，辣酱油50克，绍酒20克，精盐1.5克，味精1克，干淀粉40克，湿淀粉20克，色拉油500克（实耗75克）。
做法： 1、将洗净的鲳鱼平放砧板上，在鱼划鳍处横切一刀至龙骨，去出一片的鱼片去胸骨，再改成鱼片，用精盐、味精、绍酒、蛋清、淀粉上浆。
2、将另一片带头、带尾的鱼在鱼肉一边剞上十字花刀，用绍酒、精盐、辣酱油、洋葱末腌渍入味，拍上干淀粉。青椒去籽，切成块。
3、锅上火放少许油烧热至180度时，放入带头尾的鱼，肉面朝下煎至断生，待香味溢出、炸至金黄时出锅装入盘中（肉面在下）。
4、锅复上火，放油烧至105度，放入鱼片，划油，断生捞出，锅留油放入蒜片、青椒、鲜汤、绍酒、精盐、味精、湿淀粉，勾芡倒入鱼片，淋明油翻锅，装入煎好的鱼片上面，撒上胡椒粉即成。
特点： 鱼肉一面色金黄鲜香，一面洁白色滑嫩，一鱼两吃，别具风味。
