性质: 用多官能团酯化的方法使淀粉分子中至少有2个相邻的羟基进行交联而成的一类变性淀粉。具有耐热、耐酸、耐碱、抗机械剪切性,以及冻融稳定性。将交联剂加到带有碱性的淀粉乳液中,搅拌需达到所需交联度,经中和、过滤、清洗、干燥而得。所用交联剂有三氯氧磷、环氧氯丙烷、三偏磷酸钠、偏磷酸盐等。用作食品工业的乳化剂、增稠剂、稳定剂,铸造工业的砂芯胶黏剂,造纸工业的施胶剂、瓦椤纸(纸板)的胶黏剂,纺织工业的上浆剂和干电池隔离剂等。
