      参与发酵豆类生产酱油的微生物。由米曲霉产生的酶系将豆类中的蛋白质、淀粉和脂肪水解成氨基酸、糖等,再经耐盐乳酸菌和耐盐酵母菌发酵生成酒精、有机酸和酯,便成为酱油。
  
  用米曲霉属黄曲霉群的微生物发酵酿造酱油不产生黄曲霉毒素B1。米曲霉变种很多,中国当前在酱油酿造中应用最广的菌株为沪酿 3.042号米曲霉,此菌株繁殖力强,生长速度快,能抑制杂菌,制曲时间只需24小时,原料利用率较高。
  
  日本酿造酱油使用米曲霉和酱油曲霉,酱油曲霉与米曲霉的主要区别在于前者分生孢子表面有小突起,分生孢子梗表面光滑且较短,因而使通风制曲料层可以适当的增厚。
  
  酱油的酿造,特别是酱油独具的风味,是多种微生物共同发酵、综合作用的结果。
