   从红藻门藻,如石花菜中提取的一种高分子物质。其结构和组成随原料及提取的方法的不同而异 ,但主要成分是琼脂糖,其次是硫琼脂及少量的D-葡萄糖醛酸及丙酮酸等。琼脂为多糖,其结构如下。分子量10余万。将红藻煮沸、过滤、冷却、脱水干燥而得。一般为白色或淡黄色有光泽的胶片或白色粉末。琼脂易溶于沸水中,不溶于冷水,但可溶胀,也不溶于有机溶剂,比较耐碱而不耐酸。琼脂主要用于食品的增稠剂。蚕丝浆剂、缓泻剂及制药工业的各种助剂。还可用于细菌培养基、固定化酶的载体、电泳介质等研究领域。
