      在真空下进行的蒸发操作。真空蒸发可以降低溶液沸点,故具有以下优点:①可处理高温下易分解的热敏性物料,如牛奶、果汁、蜂蜜和抗生素等。②增大传热推动力,提高蒸发器单位传热面积的蒸发量。③可利用低温热源,降低能耗。多效蒸发装置中的最后几效都是在真空下操作的。然而,溶液降温会使粘度增大,导致传热系数减小。
  
  在真空蒸发流程中(见图),末效的二次蒸汽通常在混合式冷凝器中冷凝。为了使处于真空下的冷却水能自动排出,冷凝器的安装高度一般高于10m。蒸发器的真空度由二次蒸汽的冷凝温度决定。由于溶液中溶解的气体受热释出,蒸发器和管路亦有空气漏入,为维持真空,须用真空泵(见流体输送机械)不断地排除这些不凝性气体。
