补充资料：甘薯醋
原料配方甘薯100千克、酵母菌培养液40千克、醋种40千克、炒麦粉少许。
制作方法1．把生甘薯切成细丝，加3倍的水浸渍2小时。压榨去水，蒸熟。蒸熟后和以少量的炒麦粉，和酱油曲制作一样制成甘薯曲。
2．按照生甘薯100千克，加水90千克的配合比例，使曲和水在55℃条件下糖化5小时。冷至30℃。加入酵母培养液40千克，使其在28℃发酵4—5日，最后再加入醋种40千克，经2—3星期后醋可以成熟。
3．于60℃情况下加热30分钟放置，使其沉淀。取出上澄的醋。醋粕再进行压榨，如混浊应进行过滤即可得成品醋。
