性质:植物种子、果肉、胚芽等细胞中所含的油脂。含量随原料而不同,例如米糠的含油率约为12%~20%,干椰子果肉的含油率约为63%~70%。一般用压榨法或溶剂提取法取得。在常温下大多数是液体,如豆油、花生油、菜子油等;少数是半固体或固体,如桕脂、椰子油等。根据在空气中发生的变化,即能否干燥和干燥快慢的情况,可分为:(1)干性油,如桐油、梓油、亚麻油等;(2)半干性油,如花生油、菜子油、芝麻油等;(3)非干性油,如花生油、蓖麻油等。组成三甘油酯的脂肪酸除一般的棕榈酸、硬脂酸、油酸、亚油酸、亚麻酸等以外,有时还有特殊的芥酸、花生酸、桐酸、蓖麻酸等。植物油脂多数供食用,也广泛应用于制造硬化油、肥皂、甘油、油漆和润滑油等。
