甘肃油浸腌肉

制法: (1)将猪肉切成长18厘米、宽10厘米、厚约8厘米的块,放进蒸笼内蒸至六成熟取出,乘热在肉块上抹盐和五香粉,凉透后待用。(2)大油炼好后弃渣,将温度降至45℃左右加入维生素c混匀,先灌入坛内一些垫底,然后将凉透后的肉一块块在油中浸一下,码入坛内,再把余油灌入坛内,将肉块全部淹没,待油凝固后密封坛口,放阴凉干燥处。注意:坛子内外两面均须涂有釉子,坛口平整光滑,便于密封;每1次取肉,坛内油都应重新炼过将肉埋好;炼过的大油应重加维生素c,以防止油脂氧化变哈喇。 特点:猪肉咸香味厚,营养丰富,可长期贮存。 摘自中华美食网
