原料：
抄手皮５００克，肥瘦猪肉末４００克，生姜１５克，鸡蛋１个，香油１０克，化猪油２０克，清汤１００克，胡椒面１克，味精１克，盐２５克。
制法：
１、猪肉末入盆加清汤、鸡蛋液、味精、胡椒面善汁水拌匀搅茸，形成馅心。用抄手皮包起馅心成“菱角”形。
２、盐、胡椒面、味精、酱油、化猪油、香油、葱花入碗，加入清汤。
３、煮抄手时应火旺、水宽、水开，煮至皮起皱纹发亮捞入碗内即成。
特点：
皮薄肉嫩，味美汤鲜。
