性质:毛油的主要化学脱酸方法。用烧碱处理可以几乎完全脱除油脂中的游离脂肪酸,使其转化为不溶于油的皂脚。其他酸性物质同样可以和碱化合而进入皂脚中。生成的皂脚可以从油中吸附一些杂质如磷脂、色素、蛋白质、胶质等使之同时从油中除去。脱酸的方法有间歇碱炼、离心机连续碱炼、物理精炼和泽尼斯碱炼等。
