性质:又称非单宁。从鞣料植物中随同植物鞣质一起被水浸出的、不具鞣性的水溶物质称为非鞣质。非鞣质的组成很复杂,主要包括糖类、有机酸、植物蛋白、酚类物质、无机盐、色素及树胶等,它们的种类和数量视鞣料的不同而异。存在于植物鞣液中的非鞣质具有稳定鞣质和缓冲鞣质的作用。鞣质与非鞣质的比例决定着该植物鞣剂的纯度[纯度二鞣质/(鞣质+非鞣质)×100%]。
