利用溶质在互不相溶的溶剂里溶解度的不同，用一种溶剂把溶质从另一溶剂所组成的溶液里提取出来的操作方法．例如，用四氯化碳从碘水中萃取碘，就是采用萃取的方法．
萃取分离物质时，使用分液漏斗．
萃取分离物质的操作步骤是：把用来萃取（提取）溶质的溶剂加入到盛有溶液的分液漏斗后，立即充分振荡，使溶质充分转溶到加入的溶剂中，然后静置分液漏斗．待液体分层后，再进行分液．如要获得溶质，可把溶剂蒸馏除去，就能得到纯净的溶质．
