| 鹅 Anser domestica；goose 鸭科雁属大型水禽。鹅肉营养丰富，味道鲜美；鹅肥肝质地细嫩，风行国际食品市场；羽绒富弹性，结实耐磨，隔热吸水性能好，用于制作羽绒被服。中国鹅的饲养量居世界之首。按体型鹅可分为大、中、小3种。小型鹅产蛋量高，如山东玉龙鹅等年产蛋可达100～120个，而大型鹅仅产25～35个。按羽色可分为白色和灰褐色2种。前者足及喙橙黄色，体型较小；后者体型较大；鹅趾间有蹼，善游泳。喙扁平型，周边有缺刻，便于挖草根。嗉囊不发达，但肌胃压缩力大，盲肠也很发达。对青草、谷实的消化力强，适于放牧饲养。鹅的公母配种比例不高 ，自然配种大型鹅为1∶3～4，小型的太湖鹅为1∶6～7。人工授精繁殖时，受精率为80％～84％。孵化期30～31天。鹅品种间杂交和杂种优势利用取得良好效果。
