性质:植物代谢产生的并以不同机制对动物产生抗营养作用的物质。其抗营养作用主要表现为降低食品、饲料中营养物质的利用率、降低动物的健康水平和生长速度。最常见的抗营养因子是豆类和其他植物种子所含的各种有毒和潜在毒性物质。这些物质有抑制蛋白质消化和利用的蛋白酶抑制因子、胰蛋白酶抑制因子、红细胞凝集素(或称外源凝集素、植物凝集素)、多酚类化合物(如单宁)等;降低能量利用率的非淀粉多糖;降低矿物质利用率的植酸;对维生素有拮抗作用的抗维生素因子。还有致甲状腺肿物、生氰配糖体和有毒氨基酸等。抗营养因子及其抗营养作用可通过加热、水浸或机械加工等物理方法,发酵、酶解等生物学方法或化学方法来消除。
