原料配方

面粉500克 猪油150克 炒熟猪肉馅150克 水海米25克 熟鸡脯肉丁100克 蛋清1个 酱油、香油、味精、葱花、精盐适量

制作方法

1.把300克面倒在案板上,扒个坑,加50克猪油和150克温水,和成面团,饧10分钟。

2.把剩余的200克面粉加100克猪油拌匀,调成干油酥。

3.把熟肉馅倒入盆内加酱油、精盐、葱花、味精、香油拌匀成馅。

4.把干油酥和水油酥分别分成40个重量相同的剂子,再分别把干油酥包入水油酥内,把剂子按扁,擀成长方开有,折叠三层,横过来擀成长条形,从一头向另一头卷起,要到头时留一条和卷长度相等的面片。用刀切下,把这条面片擀长,用蛋清粘住卷的边和两横截面,稍干,用刀从圆的横截面中间横切开,酥面向上,按扁,从里向外擀成圆成,把酥面外露,用饺匙打上馅,上边再盖一张同样的皮,酥面也朝外,把边捏严,锁成花边。

5.在油烧到七成热时,将生坯下入,待酥鼓起,浮出油面,呈黄白色即熟,捞出沥干油,一切四半上桌。

产品特点 外酥内软,滋味鲜美。
