刀切为呼和浩特市传统名产，是当地蒙古、回、汉各族人民习用的茶点。
原料配方
皮料：面粉7千克 植物油900克 绵白糖1.75千克
酥料：面粉18千克 植物油8.6千克 绵白糖7.5千克
制作方法
1.和面：面粉摊成圆圈，将绵白糖、油倒入圈内，加适量温开水将糖、油搅拌成浆，再将四周的面粉掺入逐渐和匀。和好后要放在温暖处回饧、破筋。
2.擦酥：将糖、面混合过筛，加油擦匀制成糖酥。
3.成型：包酥要匀，包好后擀成长方型薄片，再从两端相对向中间卷起成长卷，然后切成4毫米厚薄片。
4.烘烤：将切好的片均匀地摆入烤盘，入炉烘烤，炉温160～170℃，待底面呈麦黄色时即可。
质量标准
形态：薄厚均匀，呈凹花纹，每千克36～40块。
色泽：两面均呈麦黄色。
组织：皮酥卷裹均匀，层次分明。
口味：酥、脆、干、甜。
