性质:又称糖菊苷,甜茶素,斯替维苷。吸湿性结晶。熔点198℃。旋光度-39.3°(c=5.7,水)。1g溶于800ml水中,溶于二氧六环,微溶于乙醇。天然存在于菊科植物甜叶菊  (Stevia  rebaudiana Bertoni)的叶,蔷薇科植物甜茶(Rubus suavissimus S. Lee)的叶中。可化学合成制得。本品是一种已被广泛使用的甜味剂,甜味是蔗糖的300倍,由于本品有甜味,无热值,故适用于糖尿病、肥胖症等患者代糖使用。从甜叶菊中得到的甜叶菊苷,经微核试验、染色体畸变与姊妹染色单体交换等测定,无致突变性。本品除用于食品工业外,还可用于医药工业作矫味剂(矫正某些药物的异味、怪味)和辅料(片剂、丸剂、胶囊)。本品为非糖甜味剂,不会在口腔细菌作用下产生酸,因此用它制作的糖果食品不会因产生酸而腐蚀牙齿,对预防儿童龋齿有极好的作用。此外,本品还有降血糖、降血压、促进新陈代谢、治疗胃酸过多、强壮身体等作用。
