皮蛋（松花蛋）4个，香菜（芫荽）200克，蒜茸、酱油、辣椒油、醋、香油、盐、味精适量。
1、香菜洗净切段，铺在盘内；皮蛋切瓣后整齐码放在香菜上；蒜茸撒在皮蛋上。
2、将用酱油、醋、盐、味精、辣椒油兑成的汁浇在皮蛋上，淋上香油即可。
此菜为凉菜，建议调料配比为：酱油:辣椒油:醋=3:3:4；切皮蛋用线切方便又整齐。
白菜凉拌松花蛋(4人份)
配料
小半棵白菜、3个松花蛋、1块生姜、2瓣大蒜、2茶匙生抽、1茶匙辣椒油、11/2茶匙白糖、2茶匙镇江香醋、1/2茶匙盐、1茶匙香油、1/2茶匙鸡精
做法
1.把白菜洗净，切成丝状。
2.把姜、蒜洗净，剁碎。
3.把松花蛋去壳，切成瓣状。
4.把切好的白菜丝和松花蛋放入盘中，再放入姜末和蒜末，最后把所有作料倒入盘中，搅拌均匀，即可食用。
