山药 50公克
市售蒲烧鳗 1/4条
鹌鹑蛋黄 2个
寿司饭 适量
海苔 2条
青海苔粉 少许
[制作流程]
1.将山药洗净、削皮，磨成泥备用。
2.将鳗鱼放入烤箱烤热，取出切小块备用。
3.手沾手醋，取适量寿司饭握捏成小椭圆形，围上海苔，将作法2的鳗鱼放在寿司饭上，再放入山药泥，最后取鹌鹑蛋黄摆在最上面，撒少许青海苔粉即可。
