性质:又称氨基酸酰胺。氨基酸中羧基被酰胺基取代所得化合物的总称。一般为无色结晶,缩二脲反应阳性。与氨基酸不同,能溶于醇、丙酮中。呈碱性。但一氨基二羧酸的单酰胺则呈中性。在酸性条件下均能水解成原来的氨基酸。L-α-氨基酸的酰胺可被酰酶水解。L-谷氨酰胺、L-天冬氨酰胺及茶氯酸(L-谷氨酸的γ-乙酰胺,茶的呈味成分)呈游离状态存在于自然界。从蛋白质的肽主链出来的侧链羧基(酸性氨基酸的β-及γ-羧基大多变成酰胺)。氨基酰胺可将氨基酸酯的盐酸盐与氨的甲醇溶液、浓氨水或液态氨相混后,在室温下放置数日制取。有光学活性氨基的酰胺可用作碱性分割试剂。
