性质:小茴香油有甜和苦小茴香油之分,它们分别由伞形科植物甜小茴香(Foeniculum vulgate Mill. var. dulce D.C.)和苦小茴香(F. Vulgate Mill. var. amara)的种子经水蒸气蒸馏得到的浅黄色或黄绿色液体。甜小茴香油具有茴香特征辛香气,带甜味。0.953~0.973g/cm3,1.532~1.543,旋光度+12°~+24°(25℃),凝固点≥3℃。主成分为反式茴脑、d-水芹烯、α-水芹烯和d-苧烯等。主产于西班牙。主要用于含酒精饮料。苦小茴香油具带樟脑和茴香辛香,味微苦而后甜。0.889~0.921g/cm3,1.484~1.568,旋光度+20°~+68°(20℃)。主成分为反式茴脑、α-蒎烯、莰烯、α-水芹烯等。主产于德国、西班牙、印度和中国等地。主要用于烈性酒、糖果等食品,也用于日用香精及药品。
