性质:毛油经脱胶、脱酸、脱色以后,油内还存在特有的气味、少量游离脂肪酸及部分油脂氧化后的分解产物醛、酮等。脱除油脂中有臭味物质的过程,称为“脱臭”。脱臭是在200~240℃,残压600~1300Pa,利用直接蒸汽汽提脱除油脂中的臭味。经过处理,油的烟点可以达200℃以上,基本上无异味。采用的方法有间歇式和连续式两种,以后者采用居多。脱臭的加热介质一般采用导热油。为了提高脱臭时油的稳定性,在油脂中加入抗氧剂或螯合剂,最常用的为柠檬酸。
