性质: 又称蛋氨酸。白色片状结晶或粉末,有特殊臭味,微甜。熔点280~282℃(分解)。旋光度[α]D-10.0°。溶于水、稀碱和稀酸溶液,难溶于乙醇,不溶于醚、苯、丙酮。人体的八种必需氨基酸之一,由丙烯醛及甲硫醇经化学合成法制得,或由酪蛋白酸解液分离而得。有解毒作用。用于生化研究和营养增补剂。CH3-S-CH2-CH2-CH(NH2)-COOH
