【原料】猪五花肉（带皮）1500克，豆油15克，黄酒100克，大葱25克，大蒜25克，干辣椒1个，胡椒面6克，芝麻20克（焙好），酱油10克，味精5克，白糖25克，清汤500毫升。
【制作过程】
1、将猪五花方肉用铁筷叉起，皮放在火上烧焦，起泡，再放入温水盆中浸泡，用不刀刮净尽可能毛和黑灰，洗净后，放入开水锅内煮去血沫，用刀切成8厘米见方的块。
2、大葱去皮，切成3厘米长的段；生姜去皮，切片（15克），剁成末（10克）；干辣椒洗净，去蒂，切丝。
3、炒锅烧热，放豆油，待五成热时，放入葱段、姜片、干辣椒丝，加入清汤、酱油、白糖、蒜片、黄酒、盐、味精、猪肉块，烧开后焖5分钟。将焖好的猪肉块和汤分装在小罐内，封口，上笼蒸1小时，蒸酥烂，出锅。
4、食用时，每个小罐内，撒匀焙好的芝麻，即可。
