原 料：
燕窝万字金银鸭块：水发燕菜100克，白煮鸭1只约750克，瘦火腿100克，鸡里脊100克,鸡蛋清2个。 燕窝寿字红白鸭丝：水发燕菜100克，熟板鸭脯50克，白煮鸭脯50克，鸡里脊300克，鸡蛋黄2个。
燕窝无字三鲜鸡丝: 水发燕菜100克，白煮鸭脯75克,水发海米、水发海参各50克，猪肥肉50克，荸荠10个，鸡蛋清3个，净鳜鱼肉250克，鲜毛豆25克。
燕窝疆字口蘑肥鸡：水发燕菜100克，白煮母鸡约500克，鸡里脊肉200克，肥肉膘25克，水发口蘑50克，水发香菇25克，鸡蛋清3个。
鸡里脊去筋与肥肉膘制茸，加蛋清，三套汤拌成鸡料，口蘑一片为二焯水控干，香菇切末加蛋清调匀，燕菜治净撕成丝。白煮鸡拆去骨头，撕碎加料酒，精盐腌入味；将鸡料的2/3摊在白煮鸡块上，余料摊在抹了油的盘内成圆形，划出“疆”字，填入香菇末，上笼蒸10分钟，将蒸好的肥鸡改成小象眼块，再蒸8分钟，扣入钵；“疆”字放在鸡块上，口蘑燕菜摆四周，三套汤烧开去沫，注入钵即成。
