原料:肥王鱼1尾、瘦猪肉、葱白段、姜片、白胡椒粉、鸡汤、香菜、干淀粉、熟猪油。

制作:

1.将鱼去鳃,剖腹去内脏,洗净后,用刀在鱼身上两边划小柳叶刀花。

2.猪瘦肉切成3厘米长、1.5厘米宽的鸡冠形薄片。

3.锅放在大火上烧热,下熟猪油,烧至七成熟时,放入鸡汤,再放入鱼、猪肉和葱、姜,盖上锅盖,将汤煮成奶汁,加盐,洒上白胡椒粉,出锅倒入汤碗内即成。

特点:汤浓似奶,鱼肉肥嫩细腻,味道极鲜。
