菊花茶

菊花茶(juhuaeha)花形烘青绿茶之一,以形似菊花而得名。原产于安徽省霍山县。旧时曾作为贡茶,远销河北、山东、天津一带。采制间期与一般绿茶相同。采摘肥壮的一芽二、三叶鲜叶,经杀,(俗称炒茶)、造型、烘干而成。杀青时要先抖炒,后滚炒,把叶子炒成管状直条,约五六成干时出锅,甩条摊放。回软后,用手理直湿坯,短条在内长条在外,40根为一朵,以梗端比齐,用彩色丝线扎紧。然后立于桌上,将芽叶由外到里一根一根、一层一层剥开、压平。再用黄色丝线打结作花蕊(因黄色颜料有毒,后不再做花蕊)。烘干后,便成菊花茶。 (严洁)
