箩卜排骨汤
原料:
排骨1kg, 箩卜1kg, 姜一截(10厘米长), 红枣8颗左右, 枸杞一小撮, 葱和香菜(这两样非必需), 盐, 鸡精, 胡椒粉.
做法:
1.排骨宰成4厘米长的段, 下开水煮至血水都出来后, 捞起洗干净待用. 箩卜削皮切块, 姜拍破. 葱和香菜切碎装碟.
2. 锅里掺入足够的水, 倒入排骨, 箩卜, 姜, 枣, 构杞, 盐, 鸡精, 盖上锅盖大火烧开然后转至小火慢慢炖至箩卜可以用筷子轻易夹断, 撒点胡椒粉就ok了. 喝的时候可以依各人的口味加点葱花和香菜进去, 别有一番滋味.
注意:
1、排骨一定要事先煮一次去掉血水, 不然血的腥味足以毁掉一锅汤.
2、水最好一次性掺够, 如果掺少了, 中途想再掺的话记得一定要掺烧开的滚水. 加冷水的话会使汤的温度突然下降, 从而使汤里的蛋白质和脂肪凝固而不融于汤中, 这样会影响汤的味道. 同样在做其它烧菜或炖菜时也不要中途加冷水.
