一种胃肠激素。为胃幽门腺G细胞所分秘，由17个氨基酸组成，其第12位酪氨酸未被硫酸化的称为胃泌素Ⅰ；硫酸化的称胃泌素Ⅱ，两者的生物活性相同。主要生理功能为促进胃液(胃酸和胃蛋白酶原）分泌，胃窦收缩和消化道粘膜生长。胃泌素瘤时，胃泌素分泌明显增多。
