农产品的国际贸易在平等、互利、互通有无原则下，通过市场机制，在国家(或地区)间交易农产品，以充分发挥各地区的自然资源优势，满足人类日益增长的生活消费需要。在农业生产保证国内市场需要还有大量剩余的情况下，产生了国际间的农产品贸易随着农产品加工、包装、运输和贮存业的兴起，特别是专业化生产和金融、信贷、市场信息业的发展，农产品的国际贸易逐步发展起来，交易品种增多，贸易量扩大，市场遍布全球。从20世纪叨年代中期以后.农产品贸易的发展，大体上经历了四个阶段:①从4。年代中期到1 97。年的稳步发展时期。世界农产品出口值(以下均按198。年不变价格计算)，从300多亿美元增加到675亿美元，平均年增长3.8%。②1971一198。年的大发展时期。出口值从724亿美元增加到3 054亿美元.年平均增长15%。③1981一1985年的衰退时期。由于受主要发达国家经济衰退影响，市场争夺加剧，贸易保护王义盛行，而农产品贸易价格又持续下跌.出口值从3 054亿美元回跌到1955年的2 761亿美元。④1986一1992年的回升发展时期。欧共体带头发展起高值农业(主要是林、渔、园艺和部分畜产品)，并对粮油和畜牧业实行控制生产政策，再加上苏联、东欧国家对农产品的大量需求，出口值迅速回升并走向发展，到1992年达4 985亿美元，年均增长8.9%。但到1993年出口值再次下滑为4 696亿美元。 总的看来，当代农产品国际贸易的发展同世界经济的消长有着内在的关联。高值农产品及其加工品的贸易处于发展状态，而传统的大宗农产品贸易则相对稳定.贸易品种结构日趋多样化。欧洲市场发展较快，而其他中、小贸易国的市场竞争力相对削弱，尤其是发展中国家的农产品出口渐趋衰落，按出口值所占比重计，已从60年代的50肠左右降为28%。
