原料: 原 料：
主料：冬瓜400克。 配料：河虾200克，三文治火腿25克，鸡蛋清1个。 调料：精盐4克，味精2克，胡椒粉3克，鸡精粉2克，生粉6克，葱油2克，高级清汤750克。
制法: （1）河虾剥去头、壳，挑去沙线，洗净，置铺猪皮的墩头上剁成茸；冬瓜去净皮、瓤，也剁成细茸，摊入盘中，上笼用猛火蒸约15分钟取出；三文治火腿切成绿豆大小的丁。均备用。
（2）净锅上火，掺入高汤，放入虾茸、冬瓜茸，烧沸后用精盐、味精、胡椒粉、鸡精粉等调好味，再勾入湿生粉，淋入鸡蛋清，撒入火腿丁，最后淋入葱油，推匀出锅，装入汤盆即 成。
特点: 清热降火，鲜香可口，非常适合夏日食用。
关键：
（1）虾茸要剁细。
（2）用湿生粉勾薄芡。
