原料:
血皮菜250克 鸡蛋2个 葱花、精盐、胡椒粉、味精、水淀粉、鲜汤、香油、化猪油各适量
制法:
1.血皮菜择洗干净,入沸水锅中汆一水捞出,再放入凉开水中过凉,然后捞出挤干水分,切成细末;鸡蛋磕入碗内,打散成蛋液。
2.净锅上火,入化猪油烧热,下入葱花炝香后,掺入鲜汤,烧沸后调入精盐、胡椒粉、味精,下入血皮菜末,接着用水淀粉勾芡,淋入鸡蛋液,边淋边搅,烧沸后,起锅装入汤盆内,淋入香油,即成。
特点:
色泽艳丽,汤鲜味美。
