多不饱和脂肪酸


具有两个或两个以上双键的脂肪酸。主要为亚油酸、亚麻油酸、花生四烯酸等。鱼和家禽中含多不饱和脂肪酸较多。食用植物油中如花生油、豆油、棉子油等则含有大量的多不饱和脂肪酸。它可减少血浆中胆固醇含量。临床采取限制食物中动物脂肪,以植物油代替动物油的办法,可达到一定的降血脂的治疗目的。
