南霞泥鳅粉干从选料到加工，都是很讲究的。
首先要选用从不受污染的水田里捕捉来的活泥鳅，不能用人工饲养的。泥鳅抓来后要放在清水中养1-2天，让它吐尽泥味。煮前1-2小时，还要给泥鳅喂少许食盐、酒糟、味精，使调味品的味道进入泥鳅体内。
煮泥鳅时，先在锅中放入冷水，把洗净的泥鳅倒入锅中，让它在冷水中游动，然后文火烧锅，使泥鳅在游动的状态下被煮熟，这样煮出来的泥鳅又软又滑。
泥鳅煮熟后，在泥鳅汤中加入烫过的上好粉干和生姜、腌菜、红酒等调料，即可食用，正宗的南霞泥鳅粉干，讲究嫩、香、软、滑、鲜，无怪乎其名声远扬了。
泥鳅煮粉干，不仅可以一饱口服，也有食疗的作用。按照现代营养学的观点，泥鳅是高蛋白、低脂肪、多营养素的上佳食品。据有关资料介绍，每百克鲜泥鳅含蛋白质18.4克，脂肪3.7克，钙38毫克，磷72毫克，铁0.9毫克，还有丰富的维生素和烟酸，其营养价值比瘦猪肉还略胜一筹。
