性质:组成肌肉中肌原纤维的蛋白质,其中肌球蛋白占蛋白质总量的54%,肌动蛋白占蛋白质总量的20%~25%,还有原肌球蛋白、肌原蛋白和少量功能不明的调节性结构蛋白。含量愈高,食用时口感越韧。肌原纤维蛋白不溶于水,但可以酶解。
