性质:又称食品硬化剂(hardener for food)。一类使食品中胶质凝固,使食品固化变硬的食品添加剂。一些钙盐能和果胶酸形成果胶酸钙凝胶,使一些果疏的果实不会因不溶性果胶被分解成果胶酸而软化。常用的有氯化钙、乳酸钙、柠檬酸钙等。一些二价碱金属中性盐,溶于水中电离成带电荷的离子,因这些离子的电荷与热变性蛋白质分子的电荷相互作用而消失,破坏了蛋白质分子表面的水化膜,使蛋白质分子联结凝固。用作制豆制品的固化剂。豆腐是中国的发明,传统上用石膏、盐卤作固化剂,就是由于钙盐、镁盐的作用。
