    性状 白色固体。熔点52-88℃。主要成分为具有高亲水性的蔗糖分子和具有亲油性的脂肪酸基团。加热至145℃分解。120℃以下稳定。在酸性或碱性下加热则被皂化。无毒,无刺激性。可生物降解。具有优良的乳化、分散、润湿、去污、稳泡、增溶等性能。
