油糊角，创制于唐代。据传那时有位将军远征，其妻身怀有孕。将军征战得胜而归，其妻用家乡的特产黍米面，炸成油糊角犒劳丈夫，将军食后瓒不绝口。即日其妻分娩，得一男一女，将军大喜，命军厨做油糊角犒劳三军，以示庆贺。有趣的是油糊角里分别包上了红豆馅和胡萝卜馅，红豆馅表示生男，胡萝卜馅表示生女。此后，人们为了纪念这位将军，就用做油糊角作为生儿育女的吉祥物。
清末，陵川县的一些饭铺达到盛极时期。油糊角至今仍是当地常见的传统食品，并且有了很大的发展。黍米面已被面粉代替，菜馅中有鸡蛋、豆腐、粉丝、粉皮、韭菜、芝麻、萝卜等多种。
