原 料：
水芹菜500克，鸡蛋3个，葱花20克，精盐4克，味精2克，植物油40克。
制法: （1）水芹菜去叶片根，把叶柄洗净，切段，放入沸水锅中焯一下捞出。
（2）炒锅上火，放油烧热，下葱花10克煸香，将搅好的鸡蛋倒入，炒成小块备用。
（3）油锅放油烧热，下葱花煸香，投入水芹菜煸炒，加入精盐炒至入味，倒入炒好的鸡蛋，放入味精，炒匀出锅即成。
特点: 色泽黄绿，软嫩脆爽，咸鲜香浓，清香解毒，利水消肿。
