[原料] 鲫鱼、黑鱼、豆油、八角、茴香、干辣椒、葱姜片、花

椒、吞莱、香油。

[[[烹调]]方法]

1.黑鱼去骨,出鱼片上浆,鲫鱼宰杀洗净

2.豆油烧热,下入八角、茴香、干辣椒、花椒、葱姜片煸香,再下入鲫鱼、黑鱼骨,煸至发白,烹入白酒少许,加入沸水,加盖,大火烧开,至汤浓黄时捞出鱼,下入鱼片,氽熟。鲫鱼立体摆放,鱼片放中间,汤调咸鲜味,撒香莱,放蒜末、香油即可。

[特色点评] 鲜香无比,鱼肉滑嫩。
