主料

肥猪肉250克,白糖300克,糖冬瓜片50克,橘饼40克,老香黄30克,花生仁25克,白芝麻20克,白糖粉100克,自发粉120克,生粉10克,生油1000克(耗油125克)。

做法

1、先将肥猪肉用刀切成每片约高度2厘米、宽度5厘米、厚度2毫米的两片相连的薄片(即用飞刀的刀法处理),共切成24件。

2、用大碗盛着白糖,把每件肥肉片内外粘上白糖。然后逐件摆砌进另一餐盘,摆砌整齐并压实,大约用200克白糖,剩余的白糖100克另用。肥肉腌糖时间要经过24小时才可使用。

3、把花生仁、白芝麻分别炒香,再将花生仁剥去外膜,然后同芝麻一起用万能食品搅拌器搅碎,盛入大碗掺入白糖粉搅拌均匀候用。把已腌过糖的肥肉用开水冲掉白糖(糖溶化,使肥肉见透明度为止,这时已制成冰肉),用笊篱捞着,泌干水分。再用刀把冰肉的周围修整齐,同时将橘饼、老香黄、糖冬瓜片分别切成24片,夹在每件冰肉的中间,用手稍压实待用。4、先将自发粉盛碗内,加入清水200克、生油5克,搅拌均匀成为脆皮浆待用。再将炒鼎洗净烧热,倒入生油,候油热至约180摄氏度时,将每件冰肉分别蘸上脆皮浆,放进油内炸,炸至呈金黄色捞起,用餐盘盛着,便成高丽肉。再将剩下的白糖加入清水80克煮滚后,用清水把生粉开稀,勾入糖水中,然后淋在高丽肉的面上,再撒上花生、芝麻糖即成。

特点

香甜酥脆,肥而不腻。
