原料配方 特制粉65千克 食油17千克 白糖21千克 桂花1千克 碳酸钠适量
制作方法
1.发酵：将备好的特制粉和“肥引”(或用鲜酵母)及食油加入一定量的水调和均匀，即可进行发酵。视温、湿度情况，面团发起即可。
2.调制面团：先将发好的面团和糖放入和面机内，加碱水及桂花进行搅拌直至均匀，再放在操作台上用手揉制使之滑润不粘。然后将面团揉搓成条状，用顶钟顶出定量的面剂，再揉搓成小球状，交错紧贴码入盘中。在生坯表面打印红色花戳，即可入炉。
3.烤制：烤年炉温为160℃，时间为30分钟便可出炉冷却，同时在产品表面刷附香油，即为成品。
质量标准
形态：正六边形，红戳清晰，表面刷附香油，并有自然花纹。
组织：细密疏松，有均匀小蜂窝。
口味：松软、不粘，有桂花、香油香味，无异味。
