Starting from introducing the various fundamental sciences and technologies that play important roles in modern dairy scientific and technological researches, this article has described the current situation in the world that much is known about dairy products at the molecular level and research is buiding bridge between molecules and consumers.

Based on the main achievements and the history of the research of sci-tech editing methodology, the three con tributions, such as the proof of understanding channels from form to content, t he establishing of feature method and the development from category to category method, are described and discussed.
