桂林特味地羊
产地：中国广西桂林。
工艺：先将活狗用棒子打死，滚水烫过刮毛，然后用稻草火燎，使皮呈焦黄色。再开膛破肚，吊开水气，切成小块，置入砂锅，先猛火煮，然后放入适量的五香八角、生姜、酱油、葱白、食盐和适当的水，用文火焖煮，等到狗肉快煮烂时加入事先捣碎的桂林名产豆腐乳。待豆腐乳化完后，狗肉亦烂，即可食用。
风俗：数人围坐一桌，将用砂锅煮好的狗肉放在炭火炉上吃狗肉，并以桂林三花酒助兴。吃完狗肉后剩下的狗肉汤中放入细嫩雪白的水豆腐，其味鲜美爽口别有风味。在桂林吃狗肉一般要到霜降过后才行，这时的狗体壮膘肥肉美，是吃狗肉的好季节。
