蒸面
陕西凉皮的一种，是陕南安康风味小吃一绝。
常见制作方法如下：
1、和面浆：以面粉为主料、添加少许食盐，用水把面和成糊状；
2、浆入锣：将面浆盛入表面涂刷了植物油的铁制或铝制蒸面锣（蒸面锣为圆形、平底状，四周有高约40mm左右的沿），并使面浆薄厚均匀布锣底；
3、蒸 面：把蒸面锣放入装有沸腾水的大口铁锅里并盖上锅盖，蒸数分钟；
4、取 面：数分钟后，取出锣，将蒸熟固化的面取出，圆型、清黄、柔软的蒸面即成。
5、食 用：将蒸面切成条状，再配以豆芽，浇上酱油、醋、蒜泥、芝麻酱、油泼辣子即可食用。
影响蒸面口味的因素：
一是面的筋丝、颜色，二是佐料。佐料有很大讲究，熬醋，油泼辣子里要添加独特的配料，方显蒸面的口味。佐料好，可使蒸面锦上添花。
安康蒸面分布：
安康的大街小巷都有蒸面铺，具有一定名气的有翁家的、马家的、兰家的、剌家的、潭家的等等，其调料、口味各具特色。不管再多的蒸面，在中午时分都能基本告罄，安康人的小吃，蒸面肯定是排在第一位的。
安康蒸面与西安凉皮的区别：
味道的差别是非常大的，西安凉皮用的是生醋调味。安康蒸面用的是熬熟的醋，还要再加酱油，芝麻酱，油泼辣子等，而且安康很多家蒸面，各家都有其秘方，味道也都不同。
