一般的家常便饭只讲究些营养、味道就足够了,其实,很普通的菜肴,如果讲究一下菜的颜色搭配、餐具使用和摆放样式等,菜的品位和档次马上就提高了,你的自信和兴趣也随着增加,当然,这还是一种享受。一般的规律是:

1.一般的炒、爆菜盛盘时,用铲勺将形大的或主料拉入盘里,细小的料放在盘底,形大的或主料在上层,突出了主料。

2.质嫩易碎的勾芡菜,如熘菜成盘时,要先从盘的一端倒起,就势向另一端移动,锅移到另一端时,菜肴正好全部倒进去。做时要速度快,准确。

3.对于汁稠、粘性大的菜,如酱爆肉丁,要先盛一部分入盘,再把锅里其余的盛入勺中,盖在盘中的那部分上,并用劲向下按按,这样盛入盘中的菜圆圆的,显得很饱满。

4.块大的如整鸡、整鱼,为了盛入盘中还保持整体形,盛的时候。将锅端在盘子上面,向前倾斜,一面用勺拖住鱼或鸡的前部,一面抬高锅的倾斜度向下倒,这样把整鸡或整鱼完整地盛到盘内。

总之,无论哪一种盛入方法,都要注意美观,突出主料,使盛好的每盘菜都有“丰满”感。
