饺子皮 10张

(1)盐 2小匙

糖 1大匙

香油 2/3大匙

白胡椒粉 1大匙

(2)盐 1大匙

糖 1/2大匙

制作:

1. 取锅煮水至沸腾时,放入鸭肉以中火煮12~15分钟後,捞起待凉备用,煮鸭肉的汤留著备用。

2. 将作法1的鸭肉切片成约0.3公分片状,约5片置於小盘中,加入香菜备用,其他鸭肉切成细丁备用。

3. 将鸭肉细丁加入咸菜末、姜末、葱花、蒜末与调味料1一起搅拌均匀,包入饺子皮中成为饺子。

4. 取锅煮水至沸腾时放入包好的饺子,以中火煮6~8分钟後盛起,以冷水沖泡约 1分钟再捞起沥乾。

5. 将煮鸭肉的高汤再度煮至沸腾,加入调味料2後,放入作法4的饺子即成完鸭肉咸菜汤饺。

10粒水饺份量。
